Driven duo makes small butcher shop a great success

TEN years ago, Janette and Grant Lollback saw a small butcher shop up for sale, oozing with potential.

Without a second thought, the Allora pair snapped up the store and got to work nurturing the business to what it is today.

What now stands as the Allora Butchery on Herbert St, will celebrate its 10th birthday today and Mrs Lollback said she was excited to have reached such a significant milestone.

"It is really exciting, considering when we started it was half the size of this," she said.

"As the business has grown, we've employed more staff and have changed our products."

Mrs Lollback said the biggest change in the market over the past 10 years was a switch to ready-to-go - but gourmet - products.

"People are time-poor so they just want something quick and easy," she said.

She said the butcher shop was thriving with business and they were currently all working on new flavour combinations for the next Sausage King competition.

The shop has also launched a customer rewards program over the past few weeks and Mrs Lollback said it was to give back to the community that has supported them for the past decade.

Today, there will be cake and taste tests at the butcher shop to celebrate its birthday, so drop in to wish them a happy birthday and indulge in some celebratory treats.
