New pie shop just what the Doc wants

FOR Steele's Bakery owners Gail and Brad Steele opening a second store in the centre of town has been a bit of a gamble.

The new Doc's Pies store in Palmerin St was opened in late August with the intention of expanding on the production of the local couple's popular pies.

"We opened it mainly to be a pie production plant servicing Warwick and areas outside of town," Mrs Steele said.

"We have the same range as here (Fitzroy St) just on a smaller scale.

"It's just a really nice, long, narrow new shop."

Originally opened with the same hours as the Fitzroy St bakery, the pie shop has changed its hours to more of an industrial cafe to provide food for workers early in the morning.

Mrs Steele said the new store was open from 7am-2pm.

"Workers heading out early can pick up sandwiches and salad rolls," she said.

"We had been looking for a second premises for the past 12 months.

"What we intend to do is expand more on the variety of pies."

Owning bakeries and pie shops for the past 25 years, the Steeles have an optimistic approach to expanding their business.

"We started off small here - you've got to take a gamble," Mrs Steele said.

"I don't have any doubt it'll increase - it's all possible in our minds."

The Palmerin St pie shop sits across the road from scenic Leslie Park, drawing in travellers and tourists passing through town.

With the Doc's Pies range, the Steeles are hoping to capture a different market to their main bakery.

"Our project is getting Doc's Pies out there more," Mrs Steele said.

"Tourists and caravaners coming through like to take their pies and sit in the park - it's a beautiful area."

With the Rose City Shoppingworld development in the council's hands, the Steeles are hoping it can be a boost to their new venture.

"It'll be a bonus - especially if customer sales increase," Mrs Steele said.

"You just don't know what it'll do - we're sort of right in the middle of it all."

The new store is fittingly named after Mr Steele's popular nickname - Doc.

"I wanted a catchy name for our pies," Mrs Steele said.
