
RECIPE: BBQ Pork cutlet with salsa

INGREDIENTS
Four pork cutlets
Marinade
1 tsp grated ginger
2 garlic cloves crushed
1 tsp ground coriander
½ tsp ground paprika
2 tbsp honey
4 tbsp tomato ketchup
2 tsp worcestshire sauce
Salsa
Seasonal stone-fruit chopped
½ cup macadamia nuts
½ cup macadamia oil
juice of 4 limes
Chopped coriander and mint to garnish
METHOD
Cook the cutlets, sealing both sides.
Make salsa by combining all ingredients.
Serve tOgether.
